Ultimate Sunday Snack

Warning: These cupcakes are addictive.

What are Sundays for? Brunch, food, and snacks during a lazy movie. When I think of a sweet comfort food. I think of a peanut butter and jelly. I don't normally but sweet or breads, but this is my one vice for a lazy Sunday. I've been making these cupcakes for a couple years now and they are still a hit. They are easy and so rich that you really only need one. Enjoy!

PB&J Cupcake

Prep time: 20 minutes
Cook time: 20 minutes
Makes: 18 cupcakes

Ingredient for Cake:
  • Box of white sheet cake 
(prepare as directed and cook time on box)

Ingredients for icing:
  • 1 cup smooth peanut butter
  • 5 oz very soft cream cheese
  • 1 cup  powered sugar (1/3 at a time)
  • 1/4 milk
  • 1/2 teaspoon vanilla
  • 1 cup jelly of your choice
Cupcakes:
  1. Prepare sheet cake as directed on box. Makes 18 cupcakes
  2. When cupcakes finished. Put in fridge to cook
  3. While cupcakes are cooking prepare icing
Icing:
  1. Mix 5 oz of very soft cream cheese
  2. Melt 1 cup of peanut butter for about 15-20 seconds
  3. Add 1/3 of the powered sugar 
  4. Mix together
  5. Add 1/3 of powered sugar
  6. Mix
  7. Add milk and vanilla
  8. Add powered sugar
  9. You can add more milk if too hard to make the icing more creamy
Once cupcakes are chilled. Cut an x in the middle of cupcake. Let me say I am not fancy! I use a regular old ziplock back and fill with cup of whatever jelly you want! We had strawberry so that's what I used. Cut a small tip and the end then fill the cupcakes! I usually push for about 2 seconds. Add more ass needed. Then just ice those babies up. It's not fancy and it can be messy, but what PB&J isn't?
